How It Started
1999. I was working 60-hour weeks, staring out the kitchen window at my brand new truck I couldn't drive — because I was always at work. Going home to a tiny duplex I couldn't afford, just to rest up and come do it all again.
"Monday's off," they said. Almost always got called in anyway — to talk to the parents whose daughter is getting married in three years, and they want to play "country club member for the day" because their close friends are members and sponsored them.

So I became a rental chef. And I learned something: a lot of people in our profession like to see new places on the side, or supplement their 9-to-5 and come to our world for cash. I earned their trust. I paid them fast. And we had blast off.
Chef — that was me. N Staff — the folks I earned the trust of and paid fast. It grew so big that I didn't like doing it anymore. I'd only quit a job to create another one.
Now? It's a legacy. Training and inspiring the next generation. Learning how much I still have to learn. ServSafe certification, speaking engagements, culinary consulting — and a story that proves you can build something real from nothing but grit, faith, and a pair of burned hands.
